The FiLLi Cafe Story
One saffron chai, a nickname from school, and twenty years of counters, now with three of them in Texas.
It started with a cafeteria in Dubai
In 2004, Rafih FiLLi took over his father's cafeteria in Dubai. Friends had called him "FiLLi" since school, so that is what went above the door and what customers started asking for by name.
What made people come back was the chai. Rafih kept refining a saffron-infused cup until it became Zafran Chai: rich, milky, unmistakably his. Word spread the way it does around good tea, one cup at a time, and the counter turned into a queue.
Two decades on, FiLLi says it pours in more than 100 locations across 14 countries, and every one of them still brews cup by cup rather than by the batch.
Then Texas said yes
FiLLi's first United States cafe opened in Houston in 2022, on Hillcroft, in a neighborhood that already knew exactly what karak should taste like. That was the real test, and the line out the door answered it.
Sugar Land followed for the southwest suburbs, and Carrollton opened FiLLi's first cafe in the Dallas-Fort Worth area. Three Texas rooms, one kettle, the same saffron cup.
We are a cafe, not just a chai stand: coffee, breakfast plates, parathas and rolls, chaat, burgers, toasties, milkshakes and a dessert case worth saving room for.
